Here is Teeny's recipe for Banana Nut Bread - Doris sent it!
Banana Nut Bread:
1 3/4 cup all purpose flour
1 cup sugar
1 tsp. soda
½ tsp. salt
2 eggs, slightly beaten
2 ripe bananas, mashed
½ cup oil
1/4 cup plus 1 tbsp. buttermilk
1 tsp. van.
1 cup chopped pecans
In large bowl, stir together flour, sugar, soda and salt
.In another bowl, combine eggs, oil, buttermilk, bananas and vanilla.
Add the flour mixture, stirring just until combined.
Fold in nuts.
Pour into a greased 9x3x5 loaf pan.
Makes 1 loaf or 4 small loaves
.Bake @ 325 for 1 hour and 20 min.
Recipe does not double well.
