Bread – Spoon Bread

Bill likes to make Spoon Bread, and this is the recipe he likes.
Preheat oven to 400 degrees.
Butter a one quart casserole or baking dish and set aside.
If using PLAIN CORNMEAL
1 Cup boiling water
½ Cup White Corn meal.
½ Cup Milk–Can be buttermilk
½ tsp salt
1 ½ tsp baking powder
1 Tbs soft butter
2 Eggs, well beaten.
If using SELF-RISING CORNMEAL
1 Cup boiling water
½ Cup White Self-Rising Cornmeal
½ Cup Milk–Can be buttermilk

1 Tbs soft butter
2 Eggs, well beaten.
Pour the boiling water over the white cornmeal.
Beat in: milk, soft butter and eggs.
Pour into prepared baking dish.
Bake at 400 degrees for 20 to 25 minutes or until set and slightly brown.
Serve piping hot with butter.
