INGREDIENTS:
1 tablespoon olive oil
1 onion, thinly sliced
1 red bell pepper, thinly sliced
1 garlic clove, minced
1 tablespoon tomato paste
1/2 pound hot Italian sausage (if links, remove casings)
1/2 pound sweet Italian Sausage (if links, remove casings)
4 slices provolone cheese
4 ciabatta rolls, lightly toasted
1/4 cup pesto
METHOD:
Heat olive oil in a large skillet over medium heat. Add onions, peppers, and garlic. Sauté until onions are translucent and peppers are tender, about 8 to 10 minutes. Stir in tomato paste and cook an additional minute. Remove from heat.
Preheat grill to medium high. Combine both sausages in a bowl. Form into four patties. Grill about four to five minutes per side, until cooked through. Top burgers with peppers and a slice of cheese, close grill until cheese melts. Spread rolls with pesto and top with burger.

Salmon Patties
SAMMY'S #1 SALMON PATTIES | |
1 can (14 3/4 oz.) salmon 1/2 med. onion, chopped 2 eggs 1 tsp. ground pepper 1 tsp. fresh lemon juice 1 whole pkg. saltine crackers, crushed Empty 1 can salmon and juice into large mixing bowl (remove bones). Add 2 eggs. Add lemon juice. Stir mixture well. Add onion, pepper, crackers. Stir.Form into patties 3/4 to 1 inch thick. Set aside on plate or wax paper (make 5-6 patties). Let set 5 minutes. In large frying pan heat 1/2 inch cooking oil to med. high temperature. Do not skimp on oil. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through. Center should not be cold. |
Mexican Hamburgers

1 lb ground beef
1/4 lb ground pork
1/4 cup cornmeal
1/2 cup salsa (I like HOT!)
1/4 cup grated cheddar cheese
3 tablespoons canned diced green chilies
1/4 cup chopped fresh cilantro
2 garlic cloves, minced
1/2 teaspoon salt
pepper
1/4 teaspoon oregano
Directions
1Mix all together in bowl.
2Shape into patties and fry till the way you like them.
