Re: Recipe

2 small zucchini, thinly sliced
1 red bell pepper, sliced into rings

1 cup Italian salad dressing ( I used Ken's Three Cheese Italian).
Place first 5 ingredients in a 1-quart glass bowl. Cover tightly with heavy duty plastic wrap; fold back a small edge to allow steam to escape. Microwave at HIGH 2 minutes. Drain. Pour salad dressing over veggies, tossing to coat. Cover and chill until ready to serve. This only serves about 6 people

Salad Cranberry Mold--Bonnie's I use
Cranberry Mold [Originally from Bonnie]
Ingredients
1 pkg raw cranberries
½ orange peeled and seeded
½ Cup crushed pineapple, drained, saving juice.
1 Cup celery, chopped
1 Cup apple, chopped
1 ½ Cup sugar [may use less]
2 standard packages jello, can be cherry, raspberry or a mixture thereof.
2/3 Cup Hot water.
1 Cup chopped pecans.
Grind cranberries, orange, pineapple, celery, apple in food processor. It is better to grind each cranberries, orange and pineapple together. Then, separately, grind celery, and then, apple. Mix all together. Add the desired amount of sugar and stir well to dissolve. [This can even be made the night before prior to adding jello, kept in the refrigerator, well-covered.] Mix jello in the hot water, stirring to dissolve and pour into the fruit mixture. Add the chopped pecans. I usually add more than a cup and do not grind the pecans very small. I usually chop them by hand. Pour into a large serving container, cover, refrigerate until set. You may want to stir it about an hour after you put in refrigerator to mix up the ingredients that may have risen towards the top.
