Soup Beans–Jerry Crockpot

4:00 p.m.  
Start Use a large 6 Qt Crockpot

1 pkg dried mixed beans
1 pkg of center cut country ham biscuit slices or one slice center cut country ham

Wash and look beans

Fill Crockpot [CP] 1/3 full

Add Water to 1.5" from top. [I usually boil filtered water but that’s not necessary]
Put on lid and let sit 6 hours at least.   [See alternative below]

10:00 p.m.
Add country ham piece/pieces.  Not too much ham but enough to season.
Turn on high Cover

11:00 p.m.
Stir one time and turn CP to low.  Cover
Leave till next morning.

Next morning
Turn off and unplug.  You may want to take a large spoon and mash some of the beans.  Keep covered.


One Hour before nearing time to serve
Plug back in.  Turn on high, again mashing some beans to enrich the broth.  Keep covered.

After one hour turn to low until time to serve.

Cornbread is a necessity for this dish as well as onions for those who like onions.

Alternative: Sometime before noon on the day you are planning to serve, you can place the beans in the crock pot with seasoning meat.  In a separate kettle, bring enough water to rolling boil to cover the beans and fill the CP 3/4's full.  When boiling, carefully pour the boiling water over the beans and meat in the crockpot.  Let sit for one hour.  Turn the CP on high and cook for several hours.  After about 4 hours,  you can begin to mash some beans.  This will let you know if they are softening.  At this point,  you can turn the CP down to low or keep on cooking on high until ready.  About 1 to 1/2 hour before serving, turn CP off to let the beans cool.
